Something abit different from me today on the blog! I've been trying to incorporate more lifestyle into my blog this month and from now on in I shall be doing a monthly healthy eating series designed for students!
This month we have Tofu & Peanut Patties, these are a perfect healthy substitute for burgers and only take 30 minutes to make!
Ingredients
(Makes enough for one - 2/3 patties)

garlic clove - 2p

cup unsalted peanuts - 40p
fresh
coriander - 20p
65g
Firm Tofu - 40p
¼
cup brown rice (precooked) - 9p
½
tbsp soy sauce - 1p (if that!)
Olive oil for shallow frying - 1p (if that!)
Total cost to make: £1.18 (rough estimate based on ASDA & Sainsbury Prices for the quantities shown)
Total Calorie Count: 433kcal (roughly)
STEP 1: Roughly chop the onion and garlic and fry in a pan with a small amount of olive oil until golden.
STEP 2: Crumble the tofu into a bowl and add the rice, fried onions & garlic, peanuts, coriander and soy sauce. Blend together until a rough sticky paste is formed.
STEP 3: Divide the mixture into even piles and form into patties using your hands (it gets messy be warned). Heat some olive oil in a frying pan and place the patties evenly apart.
STEP 4: Cook on each side on a medium-high heat for a couple of minutes until golden brown and piping hot!
STEP 5: Plate up and serve with your preferred accompaniment. A toasted burger bun with lettuce, cucumber and mayonnaise works well as does a simple side salad!

That's it! How simple is that?! You may notice a courgette in my Ingredients photo but not in the final result, that is because I had roasted courgette and Dan had a tomato salad. His plate looked much more appetizing than mine so I decided to photograph his plate rather than mine!

Yup that is one attractive couple right there! Here you can see first hand that making these patties is a messy job! Oh and Dan is a nuisance in the kitchen!
